Tugi

TUGI OR NOT TUGI. Very surprised and actually quite pleased to find this: Tugi or Asiatic Yam. It is a wild tuber that I believe comes only from my home province of Pangasinan. Roasted or boiled, the soft skin peeled away, the white flesh dipped in sugar — it tastes simply divine, really rings back memories. A special preparation by my Lola Catalina, usually around Christmas time, is to mash it with “inlubi” rice. If you have the same memory, you had an awesome provincial childhood.
