Arugula

Arugula is a delicate leafy with a strong personality. Peppery, slightly bitter, and bright, it only takes a handful to change a dish. It cuts through rich food, balances cheese, and adds freshness without needing much preparation.

It’s also one of the more sensitive leafies to grow and handle. It wilts faster than most greens and needs to move quickly after harvest. When supply drops or weather becomes difficult, prices climb fast. There are seasons when arugula reaches around ₱1,000 per kilo in restaurant supply chains, which is why it’s often treated as a premium ingredient.

Our arugula comes from Gina and her family, one of our longtime leafy vegetable growers. Gina plants different kinds of leafies throughout the year. Her harvests are never predictable. Some weeks, she messages us asking if we can help move 30 or 60 kilos. Other times, it suddenly becomes a few hundred kilos.
