Among potato farmers, sizing works in a strange way. Medium potatoes are preferred. Marble-sized ones have a steady market, especially with Korean restaurants. But the ones in between, smaller than medium and bigger than marble, are classified as “Extra.”
Extra doesn’t mean better. It usually means unwanted. If there’s extra space on the truck, farmers bring them to the market. If there isn’t, they’re often left behind. They’re seen as extra baggage, something that might not sell anyway.
