Cook Ube Halaya while you forced to keep indoors tomorrow.
“KATUTUBE” IS KATUTUBONG UBE. We would like to source some extraordinary ube from this thriving indigenous Aeta farming community living on the slopes of Mt. Pimmayong, near San Marcelino, Zambales. They have an association with a very cool name, here goes — Lupon ng Itanglew sa Ganap na Asenso. They harvested more than 1,000 kilos of Ube and we would like to take most of it for a group buy for our Rural RIsing community. The samples we have received from them are better than most of the ube we have come across and handled so far. Cooked ube in the form of fried ube chips, which we understand is one of their traditional foods, is quite delicious. The halaya that we have made with these ube have turned out to be more than delicious.
BACKGROUNDER: Ube retails for P295/kg online, a little less at public markets if you can find it’s
